St. Louis Green Machine Win Healthy Kids Cook-Off Contest

Mathews-Dickey based gardening program has the winning recipe: Rainbow Salsa


A recent entry into the Healthy Kids Cook-Off Contest landed $1,000 ($500 cash; Amazon and grocery store gift cards worth $250 each) for the Green St. Louis Machine program. Sponsored by the City of St. Louis Department of Health and Incite, the contest was held to promote healthy eating. Contestants were invited to submit their family’s recipe to the Healthy Kids Cook-Off Contest via phone, fax, postal mail,  several online avenues and even via text entry to a short code.

The Winners

The group sent in five different recipes but Rainbow Salsa was the winner. Winning the contest not only allotted them great prizes but also a spot in video for the City of St. Louis Department of Health. Two members of Green St. Louis Machine, Christian and Elijah White, appear in the the video along with Regina, their mom and active volunteer and supporter of the group. They along with the two other winning groups were invited to the 96.3 set located at Power House inside St. Louis Union Station to do a video demonstration of their recipe preparation.

Behind the ScenesNow 96.3 Radio StationAll of the winners were recorded making their winning recipes. This was a great experience for Green Machine members as well as the parents who helped. Involvement in the production gave the boys a chance to experience something they’d never done before, opening their sights to new career fields. Elijah really enjoyed working with the cameras and Christian loved being on camera. “This makes me want to go to college so I can work in radio or video production,” stated Elijah because its something he “never knew I liked!”

Healthy Food, Healthy Kids

Participation in the Green St. Louis Machine (just like many other Mathews-Dickey programs) help bring positive outlook and self-confidence to student’s homes and help create goals for kids who need direction. This program teaches them not only how to live healthier and grow food but also responsibility and an enhanced understanding of science and math. Additionally, members have demonstrated positive changes in their behavior.

Rainbow Salsa Recipe

Green St. Louis Machine’s winning recipe ” Rainbow Salsa” consists of:

5 tomatoes, 1 orange pepper, 1 yellow pepper, 1 mango, 2 cans of whole corn, 3 cups cilantro, 2 avocados, 1 lime, 1 red onion, 1 can of black beans, 1 teaspoon salt and 4 cloves garlic.

Directions: Chop it all up and enjoy!

What Else is Cooking for the Green St. Louis Machine?

Due to the great success of this program, the group have been invited to New York to work alongside educator Steven Ritz in his classroom at CS – Community School 55 in the Bronx. They will provide a cooking demonstration for students right there in the classroom using their custom kitchen. They will travel the last week of January!
